Peach Barbecue Sauce
It’s been a difficult week — I haven’t been sleeping so existing has been difficult (and blogging seemed pretty impossible!) But I actually woke up feeling halfway decent today so it’s time to share this delicious sauce.
This peach barbecue sauce marks the last of our Peach Truck peaches! It’s tangy, sweet, and adds just the right zing to smoky-spicy meat.
4 peaches, pitted, peeled and roughly chopped (10-12 ounces)
1/4 teaspoon salt
2 1/2 tablespoons yellow mustard
2 tablespoon honey (I used local Austin, Texas tallow honey!)
2 tablespoon coconut palm sugar (or brown sugar)
1 tablespoon apple cider vinegar
Puree peaches in a blender, pour purée into a medium saucepan. Add rest of ingredients, bring to a boil. Reduce to a simmer, and cook for 15 minutes, stirring often. Cool in pan and transfer to a reusable jar + lid!
Serve sauce chilled.
I recommended freezing if you aren’t planning to use it all right away. I have frozen it and thawed in the fridge successfully without separation.
