Peach Compote + Oatmeal
Whew! I was not fully prepared for 25 lbs. of ripe Georgia peaches! But thankfully, there are more peachy keen recipes than just pie and cobbler.
Like this Fresh Peach Compote!
6 peaches pitted + chopped
2 tablespoons brown sugar
1 tablespoon lemon juice
2 tablespoons filtered water
1 teaspoon vanilla
Combine all ingredients in a medium saucepan, bring to a gentle boil. Stirring occasionally, lower heat to a simmer and cook until liquid reduces. Cool in pan, transfer to jar + lid, and store in the refrigerator.
I brought some to our upstairs neighbors, J + J, who treated Trevor to some of J’s homemade blueberry-peach cobbler last week.
Yesterday we had Brown Sugar + Maple Oatmeal topped with fresh peach compote — mmmmm!
2 cups filtered water
1 cup gluten free rolled oats (not quick-cooking oats)
2 teaspoons brown sugar
1 tablespoon maple syrup
Combine all ingredients in a saucepan. Bring to a boil and reduce to medium heat stirring frequently, about 5 minutes until liquid is absorbed and oatmeal has thickened. Remove from heat, serve in bowls, top with peach compote and enjoy!
This oatmeal recipe is excellent for pairing with sweet peach compote because it isn’t too sweet itself!
