Chipotle Beef Tacos
Put this in the crockpot and forget about it for at least sixteen hours — trust me, it’s worth it!
The best part about this slow-cooker beef recipe is that you can use just about any cut you have. I’ve used chuck roast, stew beef… even round steak. The best results came from a “tougher” cut with a decent amount of fat.
1 1/2 lbs. chuck roast
1 medium onion
1 tablespoon minced garlic
1-2 chipotle peppers in adobo sauce (depends on how spicy you want it) finely chopped
2 bay leaves (optional, I’ve made it with and without)
1 tablespoon dried oregano
Combine all ingredients in slow cooker and cook on LOW for 14-16 hours or until “fall-off-the-bones-tender”.
Serve on warm corn tortillas with Peach Barbecue Sauce or cabbage slaw dressed with fresh lime juice.
