Fried Rice
I’ve been meaning to make fried rice since this whole social distancing thing started. I finally made it on Friday — it was the perfect idea! I had eggs I needed to use, fresh veggies, some leftover smoked sausage, annnd no cooked rice…
Thankfully this recipe from Gimme Some Oven (cutest blog name ever!) has a little section for if you’re using fresh rice like I did and it saved my bacon, er, sausage?
Didn’t plan to chop my veggies like this, but I accidentally made an 🇮🇪 Irish flag with broccoli, onions, and carrots!
My mom brought us a package of Kiolbassa Beef Sausage and I was excited to see that’s a local Texas company based in San Antonio. (I used four links in this recipe.)
I usually see fried rice made with peas but I didn’t have any peas and I did have broccoli. My husband isn’t a big fan of broccoli and he said it was great in this! “It didn’t even taste like it had broccoli in it.” So yay?
I didn’t have oyster sauce so I used fish sauce and it tasted great. I also appreciated that this recipe is written for low sodium soy sauce — Bragg’s Liquid Aminos worked perfectly.
I borrowed my sexy husband to help stir while I cooked the eggs in a separate pan. I know it’s traditional to cook the eggs in the same pan but that never works well for me. (I also used three eggs instead of the recipe’s two.)
I will definitely be making extra rice on occasion just so I can make this again!
