Chicken Salad Sandwich
I came across this recipe from A Family Feast while I was searching for a copycat recipe for Zoe’s Kitchen chicken salad. This doesn’t taste like the chicken salad from Zoe’s but it’s still a good recipe in its own right.

I used two cans of Member’s Mark (from Sam’s Club) chunk chicken breasts and used my stand mixer to shred it as directed in the recipe. It worked!
I added all the ingredients to the chicken (except for the mayonnaise) and mixed it well. I added mayo, gave it a good stir and it was ready to go on toast.
If you’re looking for a gluten free loaf that reminds you of whole wheat bread, I recommend Udi’s Gluten Free Whole Grain — even my gluten-eating husband agreed it was very similar!
