BLT ...with spinach?
Before I moved to Texas, I managed the evening shift at a community college café. BLTs (or bacon, lettuce, and tomato sandwiches) were very popular amongst the students and as you can imagine, I made a LOT of them in the three years I worked there.
I learned a few things:
Bacon should be crispy but still a little flexible — cracked bacon falling off the bread isn’t cool
Tomatoes should be firm and deep red if possible for the best texture and flavor. Slice them thinly and evenly
Toasted bread is traditional but don’t skip the mayonnaise — crispy outside is fine but you don’t want the inside to be dry
I didn’t add this to the above list because it is just my opinion but… don’t use lettuce. Spinach tastes better than lettuce! And it’s prettier 🤷🏻♀️
I bought tomatoes “on the vine” a little over a week ago, they are not soft yet! I may start paying the extra money for vine tomatoes since I don’t always use them fast enough.
One of the reasons I love spinach is because of its deep green color — it looks so appetizing on a sandwich.
My preferred mayonnaise comes from Trader Joe’s — simple ingredients and no added sweeteners. But mainly it just tastes really good! (Even my husband, a sworn Miracle Whip man, likes it.)
Udi’s Gluten Free Hot Dog Buns: usually in the freezer aisle, I put them, still frozen and unopened, on my pizza round (it has holes in it) and baked them for 5-7 minutes on 400F. The outsides were toasty and crisp but the inside was soft. Perfect combination in my opinion. Plus the longer, narrower shape was excellent for long, narrow strips of bacon. Made a wonderful handheld sandwich and two sandwiches was the perfect serving size.
Note: turkey bacon tastes good too! Last time I was at the store, a package of good quality bacon was over $8.00USD. The turkey bacon was on sale 2 packages for $5.00. A no brainer in my opinion!
